Floating Gardens of Xochimilco
Xochimilco is an agricultural area located 17 miles (28 km) south of Mexico City where many of the city’s flowers are grown. Back in Aztec times, this valley was once a lake. Learn how the local people, as a way around the lack of farmland, developed islands with floating reed mats loaded with soil and used them as gardens called chinampas. Today, these gardens are an ecological reserve and a UNESCO World Heritage site.
Board a colorful, flat-bottomed boat called a trajinera with your guide, and for an hour take a slow cruise on the chinampa channels, passing by floating gardens of flowers. As your boatman moves the vessel along by pulling a pole through the water, hear from your guide about the characteristic boats, originally hollowed from logs and once used for transportation throughout Mexico.- Pass by other painted vessels transporting passengers and check out the boat vendors selling fresh food. Hungry? Taste a variety of dishes and drinks, such as mole, mixiote (barbequed meat), roasted corn, quesadillas, tacos, carnitas, pulque (milk-colored alcoholic beverage) and micheladas (Mexican beer-based cocktail). Hear music like mariachi drifting from other boats, occupied by families and visitors celebrating birthdays, baptisms, weddings, or simply having a good time. (Food and drink purchases are at your own expense.)

Traditional Oaxacan Cooking Class 1:30 pm.
Welcome! My name is Sonia and since childhood I have had a great passion for traditional Oaxacan cuisine, and not only because I was born in this beautiful land, but also because I am so proud to have learned from the best cooks in the region.
- The first step will be to show you the ingredients you can find in Oaxacan homes, one of the advantages of our experience is that we have a garden with organic herbs and chilies. We make cheese and fresh cheese every day.
- My son Baldo will share his knowledge about mezcal, a tasting in which you can taste as much as you like, as well as fresh water, soft drinks and juices. Botanas? Of course you do, but you have to do it Oaxacan style, which means worms, chicatanas and chapulines.
- Have you heard anything about metate and how tortillas are made by hand? In addition to tortillas, we will make teels, jams and trifles. We will make different sauces using seasonal ingredients all cooked over comal, firewood and coal coals. The mole is an emblem of Oaxacan cuisine, and we will cook one of the 7 moles using the metate. You can’t leave without tasting dark mole, water chocolate, pot coffee, snow and a rich cake.
- Everyone will participate in the processes, cutting, grinding, making sauces and of course eating, remember when you visit a house in Oaxaca you have to come on an empty stomach.
